Snickerdoodles

In Memory of my former Sister-in-law "Nancy Friend", who made the BEST Snickerdoodles at Christmas time I've ever enjoyed.. Thanks Nancy...

Outstanding Snickerdoodles!

1/2 cup (1 stick) softened butter (not melted)
1/2 cup granulated sugar
1/3 cup brown sugar
1 egg
1/2 tsp vanilla
1 1/2 cup flour
1/4 tsp salt
1/2 tsp baking soda
1/4 tsp cream of tartar

*1 tsp. pumpkin pie spice (I added this for Thanksgiving time)

Sugar and cinnamon for rolling (1 cup sugar and 1 tsp cinnamon-mix)


Instructions
1.Preheat oven to 300
2.Mix butter, and sugars together.
3.Add egg and vanilla and mix well.
4.In a separate bowl blend flour, salt, baking soda and cream of tartar.
5.Add to wet ingredients and mix until just combined.
6.Place batter in refrigerator for 30 mins (this is the MOST important step)
7.Mix sugar and cinnamon in a small bowl for rolling
8.Scoop dough by the Tablespoonfuls and shape into balls-roll in
cinnamon and sugar
9.Place on un-greased cookie sheet
10.Bake for 14-16 mins
Notes
Cookies will be slightly gooey-leave them on the baking sheet
after they are finished in the oven…they will continue to bake.
Then, place on cooling rack.
